Just got 10 lbs of boneless pork loin: Half is nice thick chops (9).
Half is approx: 5 lb roast.
Want to make 2 roasts. Only 3 of us .
Need ideas on a small Pellet grill for a roast ,without drying it out !?
Going to add sweet potatoes baked smoked too.
What temp to smoke @to what IT Temp?
would like to have moist meat ?

What kind of pellet grill do you have? Brining will help keeping it moist.
I just bought a Grilla Chimp pellet grill.
Has a pro (smoking mode )

I'm looking at smoking a pork loin this weekend. Been doing some looking around and I'm seeing a lot of temps at the 300-310 mark for smoker. I can't find the why vs a low temp but I'm guessing the higher heat gives it the best texture. I'm also looking at making a glaze. I have a leftover jar of bacon jam so I was thinking using the rest of that and some honey, spices, and bourbon and heat up in a pan.
 
I did one over the holidays that was marinated in mango nectar and rub for about 4 hrs. Then injected with the combo. Smoked @ 275 and pulled @ 135 IT. I usually pull earlier and sear but decided to let it ride this time. Perfect flavor and texture. 300° will definitely speed up the cook but I don't see any texture benefits.
