Well, it has been a while since I have posted, or even smoked for that matter. But I'm back now, and I'm back with a vengeance baby! I got my MES 30 all nice and smoky and smoked up a heart healthy meal for the family today. We had a total of 10 kids hanging out at the house today, and to my surprise, they all loved it!
First, I brined up the chicken breasts in Kosher Salt and Splenda for a couple of hours and rubbed them with evoo, basil, garlic, and pepper. Flattened them out, filled them with low fat ham, fat free cheddar, broccoli, wrapped them with turkey bacon, and plopped them in the smoker.
Next was ground sirloin that I formed into patties and stuffed with evoo sautéed mushrooms and fat free cheddar.
Finally was a batch of chili using the rest of the ground sirloin.
All smoked with cherry wood at 225 and all eaten up! Everything turned out amazingly tender and amazingly flavored! Even my wife, who claimed she did not like smoked food became a convert tonight!
