So I love pork belly slices... I've never smoked them obviously but after seeing Traeger.Rage.BBQ Traeger.Rage.BBQ 's pork belly bites the other day I was just dying to try smoking some!

Not sure how they are supposed to be smoked. I probably should have checked first... but I was in a hurry to have some for supper :p so started them around 225°f and later bumped up temp to 250°F using oak. Seasoned lightly with salt+pepper+garlic+ginger before smoking. Glazed after they were cooked with honey+soy sauce+garlic+ginger and back on the smoker. They looked pretty good right off the smoker but what do I always say.. "dead, dead crispy" so I grilled high for 5-10 minutes. Again wasn't sure on the method might be a little unorthodox but they tasted pretty damn good to me! :D

Anyway here are the pics...

Decided to grill them up

Served with Basmati Rice, Coriander (cilantro) and Spring Onions, few red chilli flakes.

I have run out of great things to say about your smokes...It seems as if they have all happened in like 3 weeks too..If I completely forget about complimenting your smokes, I could just start on your plating and photography skills !!! Awesome job on all of it.. Top notch !

Looks Great to me Charlotte!

Kind of like a thick Bacon, then finished in bite sized pieces after proper crisping.
I like my pork like you do, crisp.
And you knocked it out of the park again with the beautiful plating.
Artwork in culinary skills.

All I can say is WOW !!! I'm not sure I've ever seen anyone make an actual dish from these. Looks real tasty and tempting. A Like for you young lady !

Here in America we have a saying -"knocked it out of the park".It pertains to our pastime,Baseball, first and foremost. It means more than a home run or grand slam because the ball actually leaves the ballpark. We also use it liberally to describe other stellar actions.
Charlotte, you knocked it out of the park.

Please do continue to make us drool from across the pond:)
