Things sorta back to normal here.
Got 2.5 lbs of willies stick mix all mixed up.
Doing my old thing of mixing the dry/cure with some water. I mix with my KA and dough hook these days, hand mixing just not working out good with my rusted out hands (ha)

those look good. what temp did you take them to?

Meat IT temp i took to 151* then hung them (no cold water) they will temp to 152 on their own.

Smoker i took to 150*

Doin the SS after i get back from PT tomorrow.

Perfect . I started skipping the ice bath also , and I like the paper bag in the fridge too .

I had to zip lock these and into the igloo cooler. Our fridge went out yesterday.
 
I've got to try some stick in my Pit Boss vertical one of these days. Those came out great Rick!
