Going to see daughter in GA next month, they all asked for some sticks.
Got the grinder parts if freezer last night for 10 pounds of grinding.

Been while so I have to de rust my brain...lol

Beef or pork?
 
7lb 87/23 beef 3 lb fresh ground pork purchased from local butcher from their pigs.
 
Been like 5 years since i have used big-daddy-doit.
On table in garage, temp overnight like mid 30s. Stuff/smoke tomorrow.

Can't wait to see the finish. Wind chill was 24° this morning.......was a real shocker lol
Only good thing I could think of with windchill at - 1 this morning was about time to cold smoke more cheese lol! Sticks are gonna be tasty!

3° on the console when I pulled into the farm shop this morning.
Wish I could get in some cold smoking, but fall tillage is the priority following the floater. Ground is so dry the beaver tails are getting sand blasted
 
Got snoopy running with PID starting at 130*

Now getting stuffed.

IT Check....127*
Getting close to stall time.
PID just went to 150* I have the temp prob down lower so the sticks dont get over done and fat. You can see the dowel down lower, i have a SS screw in it so i can use the clamp on the probe to secure it to.
