If you are going with a store bought corned beef brisket made for boiling, I highly recommend soaking it before smoking it.
I did one and soaked it for 4 hours. http://www.smokingmeatforums.com/t/136558/slow-cooked-corned-beef-vs-smoked-corned-beef It can probably benefit from an overnight soak(changing water.) I thought mine turned out too salty and dry. It was almost jerky like in retrospect compared to the brisket I just smoked or even the one I boiled that same day.
Roadkill,just looking to smoke a corned beef brisket for st. patty.Should i put on rub,marinate or just put it in a foil pan with water and let it go for five or six hours.Any thoughts on that?Thanks for the reply!
Sorry I hadn't gotten back to you. I was gone the weekend to Ft. Myers for a BBQ competition. Although I know this is too late, I always turn my Corned Beef Briskets into Pastrami. I definitely soak them with water changes. Here's a couple threads on it. Again, sorry I wasn't able to get back to you sooner. Hope yours turned out good. There are a lot of others here on the forum. Just use the search bar at the top. The best thing about smoking meats is you can usually eat your mistakes. At least I do.
