I've had this 22.5" WSM now for 4 weeks and this is my 5th smoke overall on it.



All rubbed up




Ribs and trimmings on with a little bit of snow




Just pulled them out after 1 hour in the foil




Right before I pulled them off




Getting ready to chow down.


Went 3-1-1 then rested them about 1/2 hour in foil after they came off
Used Royal Oak lump and Apple wood.

They look mighty nice . I would call them trimmed spares, not quite st. louies. Not yankin yer chain, just mentioning it. Louies are seperated from the lil riblets or cartiledge on the end of your sliced ribs. Most of the folks I know, like em just like you did those as opposed to louies.

Nice lookin WSM too!

Royal oak and apple is the way to go too!
