Well we got a steal on 5lbs of full wings at Kroger ($7) over the winter so it was time to get them out of the deep freeze and onto some smoke on the WSM.  Nothing fancy on prep:

Just a cold rinse and toweled off - that's it:


On to the WSM - smoked right around 240 with hickory and mesquite 50/50:


Here they are just before pulling after 1:45 on the smoke:


Dunked and floured - now off to the deep fry for 90 seconds:


Here is the final tray, nearest to you are a simple barbecue for the kids.  The mound in the back are sriracha, butter, cilantro, minced garlic and lime (our favorite):


And the money plate with homemade blue cheese dressing:
