Where to measure and what should it be?
For all poultry, minimum of 165 in the thigh or the breast.
I like mine 170-175.
Breast I cook to 165 but I like Thighs more well done to be tender, 175 at least. Measure in the thickest part of each...JJ
Usually, because the bird is spatchcocked and laying flat, if I get the breast to 165* the thigh will be at 170* or maybe higher.
