Spares, marinated beef short ribs, top round, jap ABT's and habanero ABT's w-q/view

Getting a late start this Saturday. Hit Bookhaven Market, and grabbed a slab of spares, some beef short ribs, a top round, and some jalapenos and habaneros.

Got the short ribs marinating in charsiu & pepsi for as long as I can. beautiful looking cut of short ribs imho. Choice & angus.



marinade I am using with some pepsi to thin it out:




also got some spares, rubbed with mustard, and then my rub. meat side down for the first hour:









Also got a nice top round with a really nice fat cap imho. Rubbed with garlic powder, onion powder, black pepper and kosher salt. I will take this to 130 internal.





my beverages... Ji Beam shots, and a growler of Three Floyds Gumball Head Beer I picked up @ the brewery in Indiana today.

Another great menu...enjoy those habaneros! Hot...hot...HOT, gonna leave any seeds in them?

Noticed you mentioned the marinade had Pepsi, have you tried either Pepsi from Mexico or the "new" Throwback pepsi yet? They are made with sugar instead of High Fructose Corn Syrup (Coke does it also) and the flavor difference is amazingly huge!

gonna take most of the seeds and membrane out of the habaneros. gonna be hot enough. filling with some funky moldy cheese,and summer sausage.

I am using the throwback Pepsi actually .. I agree, tastes much better and cleaner than the HFCS pepsi we usually get. I also enjoy getting "mexican" coke/pepsi from the tacquerias in the glass bottle with the ral sugar...

the cheese is called a "double glouster cheese" kind of a cheddar looking cheese with a blue cheese looking cheese in the middle. smells funky, but should be good...

the beef was even bette than last week, poppin with flavor, rubbed only for an hour. Should be close for the spares, beef short ribs and ABT's...

the habanero ABT;s were scorching hot.... numbed my mouth for 25 mins..

Great looking grub, glad the habanero numbed you...that is what you wanted, right?
Out of beer? Hmmm....well when that happens there are 3 options
1. Run out and pick up more
2. Go to bed early
3. Just spark one up instead

You know I just had a thought, what about some kind of a sweet filled habanero AB? Maybe some apples and cream cheese with rum soaked habaneros and a little brown sugar on top of the bacon...I wonder.

thanks guys. Just a few ribs left, my wife is taking thyem to work for lunch today, otherwise its pretty much all gone.

Gonna have the ABT's with some fried eggs and rice in tacos tonight... even the habanero ones..
