Getting a late start this Saturday. Hit Bookhaven Market, and grabbed a slab of spares, some beef short ribs, a top round, and some jalapenos and habaneros.
Got the short ribs marinating in charsiu & pepsi for as long as I can. beautiful looking cut of short ribs imho. Choice & angus.
marinade I am using with some pepsi to thin it out:
also got some spares, rubbed with mustard, and then my rub. meat side down for the first hour:
Also got a nice top round with a really nice fat cap imho. Rubbed with garlic powder, onion powder, black pepper and kosher salt. I will take this to 130 internal.
my beverages... Ji Beam shots, and a growler of Three Floyds Gumball Head Beer I picked up @ the brewery in Indiana today.
