My biggest learning curve on a pooper is the convection oven side for faster cooking times.

Neither wife or I got any anniversary awards as nice as yours.

Yeah. Never ever had tried ribs in 4 hours unless spinning them in my fire burning uds. Raining more hogs with the price of feed? Yeah, might have too.
 
Congratulations on getting 15 years in one place. That's not easy these days. Later this year will be my 25 year anniversary at work as well. That's a very nice gift for your service. I'm sure you earned it as well. The ribs looked yummy. I haven't smoked any for months. That sure makes me want some right now. Enjoy mastering your new pit.
