Final pics.. little more done than I normally like, but still good. Had a very candied bark. Also threw some ABT's on.

Looks tasty! The ABT's look spot on! When using the 3-2-1 method or 2-2-1 (baby backs) I always bend test the ribs at each phase and then adjust times if needed. The temp swings that electric smokers have as they cycle can play a roll in the times especially during the braising phase.

I don't use these methods very often as I llike to run my ribs straight thru without foiling. I like the bark and the foiling mushes it out.

I need to remember this as it was my first time to do ribs on this smoker. Def needs some time tweeking. Thanks for the tips!
