It has been months since I made SD. I had been using my dried starter when time to bake since I don't do very often and don't want to have to keep feeding starter. I decided to try to use the neglected starter that been sitting in fridge. With-in a hour after feeding it was all ready active. Fed next morning and doubled in couple hours. Got to ask why all the weekly feeding? I normally use Judy's,

wife recipe for rye. Very quick bread and so good. I decided to use my normal SD recipe and sub 100 grams of rye for white and added caraway seeds. Also added 1 Tbsp Gluten. Let sit in fridge for 2 days. Wow is this good and came out perfect!
