Ok...first photo is day #1 In drying cabinet.... Second..About 12'days drying...Third... After 4 hrs in cold hickory Smoke on 13th day..... Few more weeks to cure and finish drying

Looks great! Made some few months ago using the umai bag and it was tasty. The long wait is the pits! But worth it. You mentioned drying cabinet and I'm jealous. Lol. All I have is a corner of my basement or my wine room.
 
Thanks guys! It isn't a true Drying Cabinet..it's my Smoke Hollow smoker..I put a hot plate under it and adjust temp to hold at 50-55... I put a container of water on the inside and the humidity holds at 70-75%, when im ready to smoke I simply put it outdoors and use my A Maz N 12" tube with hickory pellets....burns for about 4 hrs giving off beautiful SWEET BLUE!!!
