Have to wait a day or so I am out of casings.

I don't think I could wait. I'd be making breakfast sausage patties, and bulk hot Italian sausage for spaghetti & tacos.
We put it in 1 lb. bags & vac pack & freeze. Same with the patties, only we freeze them on a sheet pan before vac packing them.
But I'll be watching & waiting!

I may even try another sausage calculator,happy with mine but I can play with my food now.LOL

Well I will be watching this one, I love making sausage and trying new blends. I find it satisfying and relaxing.... ( Might be the beverages that come along with it lol )
What are you going to make?
 
Charley Going to do some Italian Mild and I hope to get some semi Hot
Just de-boned the 2 butts I may have to add some of that fat I bought.

The calculator Italian goes fast around my house, and also the Jimmy Dean clones.

Al- I have been making and freezing some patties using patty papers from Lisa. When I use my patty press the meat sticks to the paper, so I am rethinking my process. :-/ I think I am going to try freezing them first before removing the paper. But I would like to keep the paper to keep the meat from sticking together too. How do you get around that issue?
 
Picked casing up yesterday,so they are soaking.Same store I have been getting my casings for years.They must have changed their supplier,what was $4.00 a pound is now $4.99 for 6 oz.
I am now a customer of Waltons
They have $5.00 shipping on orders of $75.00 ending tonight.
