Someone just bought their first brisket. I'm told I'm about to receive a master-class.

Wow great work all around!!!! I hope you are taking lessons too! LOL Being one that has their kids in the kitchen cooking with us, I can relate to how rewarding a "Dad" would feel, great work on that front too!

Thanks everyone for the kind words. Plan for tonight is to chop up some of the leftovers and make some brisket tacos, I'll post some pics if I remember to grab some. Her younger sister has a cheerleading event tonight so things may get a bit hectic...

That's pretty bitchin' man!

Also - I'd give one of my kid's kidneys for a few 20 oz bottles of Big Red (preferably zero, but, I'd make an exception if all I could get was full sugar). They quit selling it here on the east coast about 10-15 years ago.

but this? this stuff is evil....

Yeah...I'm not looking forward to the dating years. She's already getting the attention from boys in church, but she still seems uninterested. At least in front of me.

I'm glad I'm past that stage. Though her final pick could've used some culling, from my point of view.
I've always remembered a line from a Damon Wayans show, where he was having a "talk" with his daughter.
"Honey, you're becoming a beautiful young woman, now. And soon there's going to be a lot of boys coming around. And I can't kill them all."

That stuff makes a kickass cornbread casserole! My absolute favorite bbq side-dish, as seen here on my tray from yesterday...

Edit: It was the Hot Honey version, which is pretty darn good for a mix.

Member the t-shirt?
"Yes I have a beautiful daughter
I also have a gun, a shovel, and an alilbi."

Wife said my daughter would not find it amusing

Alright....leftover brisket taco night update!

We started by making our own tortillas, because nothing beats a freash tortilla made with beef tallow. And because we try to make as much as we can ourselves to avoid the 47 un-needed chemicals and ingredients in the store bought stuff.

Then made up a seasoning blend consisting of mexican oregano, cumin, corriander, smoked paprika, and granulated onion and garlic. No salt or pepper as the meat already had enough. I added 3TB butter into the pan, then half my rub to the butter and let it toast for about 30 seconds to realease some added flavor, then added the meat and sautéed till warm. Added in 3 oz water and the rest of my rub and let it finish. It's done when you start getting some crispy bits.

And now to assemble. Tortillas are topped with brisket, cotija cheese, onion and cilantro, crema, my chipotle hot sauce, and a squeeze of lime.

Wife made some spanish rice and queso to go along with it, and of course...gotta have that Coke de Mexico!

All in all, was a good meal and we still have some leftover brisket to work with this week.

Love that Mexican Coca-Cola. But I only drink it when I'm revving myself up for a big job, like slicing 30 lbs. of bacon, or something. But it is a "secret" ingredient in my bbq sauce. 🤫
