Some Smoked Beef for my Sammies

Howdy Folks,

Was at the deli at the store today looking for a little something to brighten up my lunches at work this week. After looking at plain old roast beef for $8.99 a pound, I decided to pick up a small (3 lb) bottom round roast (at $3.49 a pound) and smoke it.

I started with a rub from cajunsmoker, and am smoking at 225-235F with apple wood. I am also spraying it with my favorite 3-1 mix of apple juice and bourbon.

Here is a pic after about 2 1/2 hours.

Here is the rub recipe:

4 TBSP Splenda brown sugar (if regular brown sugar use 8 TBSP)
1 TBSP Red Pepper (cayenne)
1 TBSP Chili powder
1 tsp Black Pepper
1.5 tsp dry mustard
1.5 tsp onion powder
1/2 tsp white pepper

Roast beef mmmm another favorite of mine!!! our local supermarket had a sale on them 2-week`s ago $1.49lb,, i picked up 3-of them ,,put in freezer gonna use a 2-lb one for jerky,, glad u gave me the idea for the 3lb one now ~~gonna smoke it !! The mrs like the flavor , now she wants me too do hole chick`s..lol...ok keep the porn comeing i`ll be looking ....take care

Looks great and that rub is good on roast beef.

Have not tried the brown sugar splenda yet.. I am curious to know if you think there is a taste difference.
 
I can't speak to the Splenda brown sugar as I used regular. Perhaps Cajunsmoker can chime in.

Very nice. I have done chuck roast but not bottom round roast. I'll have to give it a whirl. Smoked pork is good, but I like smoked beef even better.

I can't tell the difference. It is actually regular brown sugar blended with the white splenda. That's why you only use half as much since it's twice as sweet as regular brown sugar. Only drawback is the cost.

might have to do a search on the health concerns on splenda......I think I heard something not so good about it......but hey, read directions and follow them and you should be fine........
 
I don't go out of my way to use it myself unless it is something the wife is going to eat. She is diabetic, soooo health concerns are a way of life around here. I believe you will live forever if you just don't worry yourself to death about everything
