Out of BBQ in the freezer so time for more Pulled Pork. As a single person I have a FoodSaver, enjoy my day smoking something, portion it out, then freeze it.

Before bed last night rinsed, light mustard coat and medium rub coat then in Saran Wrap overnight





 
Got the Yoder hot, takes a bonfire to get it to temp, always afraid someone in town is going to call the Fire Dept. 

I try to cook between 250-275. Using a mix of Hickory and Pecan in the beginning then will use Pecan only. The pic shows 2 splits in the cooker. I use 2 splits for the final temp rise when cooker is almost ready to go then cook with 1 only

As a side conversation. The paint on the cook box lid is cracking and coming off (where I picked at it). Really doesn't bother me though. I have a habit of babying toys until they get the first scratch or ding, then I lighten up and actually enjoy them


 
After 6 hours and 3 hours before dinner, the pork is at 200deg.

Heated oven to 150deg, removed from cooker, wrapped in foil and going to let meat hang out in the warm oven until 1 hour before dinner
