while I was making Brats today I was prepping and smoking

Prime rib for the guys at the firehouse.

once a month we have a dinner before our business meeting and since I

was off today I told them I would cook.

It was 18# and I had to cut it in half to fit in my GOSM

at 2.5 hours over apple wood I will pull them and finish in my Alto Shaam slow roast oven

will take them to 130* and rest on hold to serve @ 6:30

not sure of  will get a slice pic later but I will try if I remember

All I want to know is what's the address of the firehouse..........LOL............ Seriously I think you are gonna knock there socks off. 
 
I was able to get one picture of the finished Rib before the guys devoured it all

and they did. it turned out perfectly!

hopefully there weren't any fires that night... they might not have left dinner to put them out.
 
A nice hard bread, couple slices of smoked provolone, and a cold beer! Life couldn't be any better.
