Such a cold snowy bummer of a week here weather wise.
I'm so glad I took this week off. Paid to sit home instead of driving 25 miles each way to work and home in 0 degree weather.. It's nasty here.. I hate this weather and am glad I'm home cooking and having a cool tall adult beverage whenever I want! Or hot chocolate..

Enjoy your time off, I have to work this week until Friday. I'm on the other side of the big pond from you (Chicago burbs). We don't get half the snow you do just the same brittle cold. I'm hoping it softens up a bit as I have smokes planned for Friday and again on NYE Sunday. So far my CampChef SmokePro STX does really well in the cold, it's just the strong winds that can start to make it dicey. This week will be the coldest I attempt to smoke in though. Cheers!

Try being over here on the west side. The wind and snow off the big lake have been brutal, but I had the smoker and the grill running Christmas Eve and Christmas day. I'll count that as a win for me. April can't get here soon enough.

Try being over here on the west side. The wind and snow off the big lake have been brutal, but I had the smoker and the grill running Christmas Eve and Christmas day. I'll count that as a win for me. April can't get here soon enough.

I did jerky in 20° weather with 10 to 20 mph winds the other day using an electric smoker.. was not to bad.. I can't imagine 10 below smoking..

The MES30 is so well insulated it worked like a champ. Snow built up on the top while it was running. 10 pound Shinkenspeck on Christmas Eve and a ribeye roast and a leg of lamb on Christmas. Finished them on the grill and did a few other things on it as well. Had to have that just ripping.
 
Cold here too, -14 this morning. We were supposed to get 6-8 inches of snow over Christmas, but that never came(thankfully). The wind gusts are unbearable when it's in the negative degrees.

Single digits in central Ohio, a thin inch of snow, just enough to make the yards look white.

When I took care of that property on the ridgetop, I cut walking trails like you might see in a park, going among the weeds and wildflowers. I would mow them for the last time in the late autumn, after the freezes. Then for the rest of the winter, whenever there was an inch or two of snow, they became these inviting white trails leading you around the yard. I would guess that top yard was maybe seven acres.
 
How was that brisket natej natej ?

Going to do some stuff tomorrow on my electric.. 16 ° F is the high temp here tomorrow.

Oh sweet make sure you post some pics, what ya got planned?.. Man thats cold! The coldest it EVER gets here is about 30F degrees.. brisky is coming along nicely its at 196 and the bark is lookin AWESOME, been out back all day in the hammock with some good tunes burnin splits

Just a brined chicken and homemade baked beans.. I will post pics. Yep..
So you can start checking the brisket now... see if your skewer or probe goes in easy and it's soft enough all over to take off..
Do you rest it an hour or 2? In foil kept warm?

Yeah she's still quite tight, wont be too long now though.. I wrap in foil when its probe tender and into a cooler with towels untill we are ready to eat... usually 2 hours or so
