how long should I smoke them? I have only done these on the grill, but would love to smoke them instead. Also throwing some wings on as well. Any advice would be greatly appreciated.
 
I have done chicken a couple of times at 225 for 3 hours.  Not sure what the IT is supposed to be but no one has gotten sick yet :)
 
Probably only need 2 hours. IT should be around 170.
What HE said...If the Skin is not Crispy enough for you, a few minutes on a Grill or 6" below your Broiler will do the trick...JJ
 
170-175 is what you are looking for. If you use real thin bacon it will be nice & crispy when the chicken is done.

At 225 you are probably looking at about 2 to 2.5 hours.
