Hi new here and was wondering if I can mix up my meats and smoke in elec smoker just for flavor, then freeze to cook later? I wouldn't need a cure then is that right? Also how long and temp? Thanks for any help.
 
What qualifies as bulk? I was just going to make 5 lbs. or so of venison sausage
 
bulk sausage is sausage that is not stuffed into casings . Jimmy Deans sausage chub you buy at the local grocery store is considered bulk sausage.
