Don't have time - Lunch is at 10:30am tomorrow & wont have time to do ribs right! Have to do them tonight? Has anyone ever smoked ribs day before you serve them! Don't want to mess this up! Never did this before - looking for help!
 
Smoke them, let them cool enough to handle, cut the slabs in half, vac pack and then refrigerate.

To warm them up, place the unopened bags a couple at a time into an empty pot, fill the pot with water, place it on the stove top, turn the burner to high, and wait for the water to boil.  Once the water begins to boil, let it go for about 5 minutes and remove the bags from the water.

Open the bags and it's almost like the ribs just came off the smoker.

For each set of bags, you MUST start over with empty pot and cool water.
 
If it's going to be one day you can smoke them a few hours and wrap in foil a couple the let them cool the day of put a thin layer of sauce and reheat at 325 for 20 minutes and set your sauce up. I have done this before and it works great!
