Im thinking of smoking some prime rib or a sirloin. This is new to me as I generally smoke pork and the only beef ive smoked is a brisket. Can anyone tell me how long I should smoke either one? Any good rubs to go on them and if I need to sear it? I was thinking of smoking it with just charcoal and not using any wood. I ususally maple and apple would for all my smokes. Any input for the best results would be great!
