Just wondering if anyone has any stories to share about smoking endeavors that went terribly
wrong?
I will start with one of mine. Back when I was a teenager we would go to the river and catch
large amounts of whitefish.
We would skin them fillet them then my Dad would smoke them in a large cardboard box.
He would use a hot plate and an old frying pan to produce the smoke, it worked great.
Later I started getting into smoking sausage, I used the same technique as he did, for the first couple of times it worked fine. Then one day on a hot summer afternoon I was smoking
some large salamis, I had just been out there checking on them, the temps were perfect
everything looked great. I went in the house for maybe 5 min. When I came back out the
entire box was engulfed in flames. I grabbed something and beat the flames out, but
the salamis were a total loss, as well as the glass candy thermometers I was using that belonged to my mom, I felt really bad about the whole thing. I don’t think I smoked anything for a longtime after that.
