Smoking in New York

Hey fellow smokers! Jbean here in New York's Hudson Valley. I am surrounded by a revolution in local and sustainable small farms focused on organic Heirloom and Heritage breeds (meat and produce). We are Lucky.
Anyway I have done a little smoking on an old brinkman (I think) vertical. I cook and bake ALOT at home, all kinds of food.
I am about to venture into real hobby smoking. I am modifying a Dynaglo wide body offset smoker and I am super Stoked!
Hope to fill you all in on the progress of some delicious smoked food!
