Well we made sausage and dad didnt have enough room. So I got the overflow. 6-15 inches forecast but the wind is right so I'm running a batch. An hour on coals only to dry then I'll add the wood.

All ready in the mix, or a bag of cure included with the package?

Dang, a few slipped. Didnt have them tied good. Hope they turn out ok on the rack
 
Oh man they look fantastic and the ones on the rack are fine. Into the freezer to cool. Cant wait till tomorrow to try one.

Forgot to report back. Turned out so good. Might let em rest an extra day next time. Maybe more water. Not dry but could use a it more moisture
 
Nice work. Home made smoked sausage unbeatable.

We are having 50c (125F) plus for last 5 days and your in snow, good time to smoke cheese. :emoji_sunglasses:
