i just started 2 bone in's for the guys at Dvorak motors wednesday. i like to use the heavy duty metal pan and grate. i raise the grate to top of pan with some kabob rods and stand the meat up and put a couple rods thru meat with onion in between to secure apart for long cook. i put bone down also.. and 240-250.. 20200602_121133.jpg 20200601_135546.jpg
 
9 + hrs in and 160.. 20200602_211335.jpg of course had to add water then, as this is when they start to sweat or juice ..
 
if ya notice i use a cast iron pan on one side with lump charcoal and chunks other side chips. but stop after 7 hrs,, the bricks and lump charcoal really keep even temps.. should be ready to rest at about 4-5 am

Looking good. Can't wait for the finished product. Nice work, especially the setup with the kabob rods. Great idea.

sorry 5 am i took off and wrapped and rested till 1/2 hr ago. i was tired and forgot pics but it is awsome . just gonna leave to bring to e'm n slaw.. and sauces
