i just started 2 bone in's for the guys at Dvorak motors wednesday. i like to use the heavy duty metal pan and grate. i raise the grate to top of pan with some kabob rods and stand the meat up and put a couple rods thru meat with onion in between to secure apart for long cook. i put bone down also.. and 240-250..
