Getting ready t o smoke a 40 day dry aged prime rib roast. I have smoked a lot of prime rib roasts. Is there anything I need to do differently with a dry aged roast, other than trim the aged bark off before smoking?
 
I agree with Jake, they tend to go pretty quick.
So you have to keep a real close eye on them.

Are you using the low pit temp method ~225° with an end sear if needed (and it might not be needed)?
 
I'd love to see pics of this when you pull it to trim, prep, & cook.
