Smoking chicken wings.

There has been quite a few threads on this but i smoked some that turned out awesome.

First i fully smoked them to 165

Second i fried them up in some peanut oil to crisp them

Third i put them in my sauce which i added smoked butter to.

Did you just fry them straight up?
 
Do you mean did i use a deep fryer?   No i smoked them in the smoker and then used a big wok with some peanut oil to crisp them up...i did about 10 at a time then put them into the sauce.  The butter i used was cold smoked when i did some cheese.  Smoked butter ROCKS with buffalo sauce.

These came out perfect. I injected them with a combo of Franks and butter, then mixed them around in the overage of sauce. Next I dusted them with Paul Prudhommes blacking seasoning.
Into the smoke at about 300 for couple hours till 170. Also made a habanero sauce that was posted on another thread for dipping. Best wings I ever had.
