Smoking Charcuterie

I am a retired and have been making and smoking sausage and bacon on a Bradley smoker for about 15 years. I built a rotisserie 3 years ago and have done a number of pig roasts that turned out delicious, feeding 30 -50 people. I love charcuterie and always look for new recipes.
