Smoking a pair of turkeys for Christmas Dinner

Ok, so apparently two 16 lb turkeys cut in half (one bird on each rack) on an 18.5” wsm is too much meat and cut off airflow inside the smoker keeping put temps down. As soon as I took the birds off and put them in the oven to finish at 350°, the temp on the smoker shot up to 300°. Lesson learned. Save that tidbit for next time.

Oven salvaged the turkey and dinner was fantastic!!! We’re playing pool and darts downstairs now.
