So I got a camp chef 24" smoke vault propane smoker for Christmas. It's a vertical smoker with no one side heat control, how would I go about cooking a packer brisket evenly without making the flat more overcooked then the point?
My SV 24 cooks very evenly from side to side.

If your really concerned you can rotate it halfway through the smoke.

Also if you put a probe in both the flat & point you will know which is cooking faster.
