Im checking out this site. I had a stainless steel smoker built here. 2 ft sq 6 ft tall. So i decidedto buy a whole pig 85 kilo.well i really have the refrigeration for that much meat at once but it worked out. So my hams pork pastrami came out good but my smoked sausage a little dry mybacon an buckboard bacon are a little sweet for my taste but definatlly edible. I shipped in 100 pounds of hickory. Im not sure about tbe local woods. Im going back an forth to n. Idaho .i still have to work. Loving the Philippines. I am having some problemswith temp. Regulation and need to make a decent smoke generator.
