Got smoker broken in with first burn off and oiling. Held temp really well, just took longer to get to temp, but next time I will start with a full chimney of charcoal instead of 1/2. Used mesquite splits. I ended up throwing a couple of steaks on the firebox since the fire was looking so nice.
Going to do some ribs next, then a pork butt. If those go well then the brisket test

I didn’t smoke anything yesterday. I got a rack of ribs on now. Still feeling her out. She holds heat well so far

I agree with the nice big fire box comment! Nice looking rig you have there!
 
Just pulled them. Felt like they were probe tender, and had good bend in them. Letting them rest. Didn’t get as much bone pull back as I thought I would have and usually get. Overall feel pretty good about first cook. Working the offset is going to be a labor of love, you Definitely have to tend to the firebox.

Things I learned today, keep the splits consistent in size. Also my smoker seemed to like firebox vents wide open vs door wide open
