A friend and I are thinking about starting up a bbq trailer and smoking once a month. I was told by my health dept that the smoker must be enclosed. Now that could include inside a concession trailer (which is much more difficult and expensive) or the guy said he knows someone with a fold out screen or some kind of enclosure for his smoker. It is bug related is why it must be enclosed. Sooooooo, any ideas or experience?
