So I built a 3 x 3 x 5 cedar smokehouse with an external smokebox (think old wood stove)...what should I do to divert smoke in order to check on whatever is in the smokehouse so I don't die of asphyxiation every time I stick my head in?

Just install a damper in your stovepipe to cut off

the smoke temporarily,

I was thinking that too.. you think a T and add 2 dampers or just one going into the smokehouse?

This is what I did. Change the elbow to a tee and add a damper. Read the link as I had to customize that damper and heat and smoke will run right out that "bypass" instead of into the smokehouse when it is close. It is not as closed as you think it is.
