I put this on wrong forum. When I was much younger my grandfather would start his smoker which was a 55 gal drum on cinder blocks with just enough space between the blocks to slide in a sauce pan with many holes drilled in it and after brining overnight he would cold smoke the fish that my brother and I caught. He would pull them out of the smoker after being smoked with Hickory and apple and reveal beautiful golden brown smoked fish, his smoker was so simple yet the perfectly smoked fish was beyond belief and the smoked catfish was my favorite.And when Gramma wasn't home he would say you can't eat smoked fish without a beer.Thnx for letting me share a few of my fondest memories.Anyone else like to smoke cats?

Catfish is my favorite eating fish of all, but I usually Pan Fry them.
They're Great Smoked, but they usually don't make it that far.

if you can control yourself try smoking them over apple wood, you will be amazed. with a simple kosher salt and brown sugar wet brine
