Hi Everyone!

A couple years ago, I was down in Maryland, and went to this place called Meding’s Seafood, they had this delicious thing there that they called Smoked Tuna Dip. I took some home, and in short order it was gone!

This dip is not only delicious, it is also quite expensive! I think around $45 a pound and on top of that it’s a 2.5 hour drive to go get it!

No way I can afford to do that very often, so I’m going to have to make my own…I tried several recipes I found online, but nothing that I was satisfied with, so I decided to strike out on my own…this is what I’ve come up with…it’s pretty close, maybe even a little better…😉


Any kind of tuna will work, this is just what was available.

3 roughly 1/2 lb steaks.
No prep needed so out to the smoker. Charcoal and hickory…about 225*

While the tuna is smoking, mix up these ingredients. Beat until smooth. Yes, that is my handwriting! Lol

5.75 hours and I pulled them off at a little over 165*. You do not want to eat them at this point, they will be dry and the smoke flavor overpowering, but this is how it’s supposed to be, because when you mix it with the rest of the dip the meat will absorb some moisture, and will spread its smoke flavor throughout…

This was my first time on the offset, and I think next time I will smoke for a shorter time…probably around 4 hours.

Using my fingers I break up the tuna into small pieces…

Remember those things we mixed together? Now add the tuna to that mixing bowl…

Mix the tuna in with a spoon.

It’s very important to then let this sit in the refrigerator for several hours, so the flavors can all mix together…

I had left out the liquid smoke entirely, because I wasn’t sure if I would need it with having done the tuna on the offset, after letting it sit for awhile, I tasted it and decided it needed it after all…

Not very photogenic, but quite a flavor burst when you dig in!

I would love for some of you folks to try this and let me know what you think!

Looks good.

The wife makes a good dip with smoked bluefish. Unfortunately bluefish have become somewhat of a rarity around these parts but that's a story for another time.
 
Sounds tasty. Why cook the tuna to 165? Your goal for the dip is a dry and crumbly texture for the fish? I would think having moist tender fish where it flakes apart would be more appetizing.
My theory is that if you dry the tuna out pretty good, then when you mix it with the rest of the stuff, it will pull that moisture into the meat and get a better distribution of flavor…

Just my theory…but it does seem to work to some extent…

Also, if you’re tuna is too soft, the dip turns into a paste and makes it very hard to dip without breaking your crackers, I know, because that’s how it came out the first few times…

I wonder if you get a different reading on the temp if the probe it inserted in the side to the middle? Not judging, simply curious
 
Have you asked for the recipe from the place you buy it from? If they make it in house they might just give it to you.

We used to go to a rural restaurant in LA in Head of Island. Best butterflied shrimp ever! They also had something crab au' gratin that my wife ordered one time. Talk about good! Every time we went after that we would always get the crab au' gratin and ate it as dip. They would sell it to go in a pint, quart, or gallon. Like you, it was pretty pricey. So asked if I could get the recipe and they gladly handed it to me.

We'll be going down on the gulf coast in LA and MS in Oct to visit family and friends, also to load up on sausage, pork, and blue crab lump meat. My wife will make some of that au' gratin shorty after get back home. I make a post with the recipe and pics. We use it primarily as a dip but my wife will make and omelet for breakfast with some of it. Talk about the best omelet ever!

Been too long since we've been down there and really looking forward to the visit. Sadly, the restaurant is no longer there. Flooded out too many times and was told they could no longer get insurance.

It very well might, I’m not too concerned about the IT, in fact this is the first time of all the times I’ve made it that I had a probe in it, I was more curious than anything. On the Traeger I always just went by time before…

I haven’t, but maybe I should!

At least you got you recipe before the restaurant closed!
