Smoked Roast Beef Sammich

Howdy fellas and non fellas. Smoked up a 4.5lb bottom round roast today for some sammiches. Trimmed the hard fat off the roast and most other fat. This was marbled well so I didn't worry about it.

Mixed up my injection. Kosmo Q reserve brisket blend mixed with beef broth

Put about 2.5 cups into the roast and hit it heavy with tx smoker tx smoker beef rub. Perfect combo for this

About 3.5hr in IT was 136 so I pulled and wrapped in foil. IT went to 141.

A little while later I loaded it on the slicer set to paper thin

Had some toasted sub rolls. Smoke ring on roast beef? Yes!

Loaded up with provolone, horseradish, red onion, lettuce, tomato.

Absolutely delicious. Beef was tender and juicy and loaded with flavor and smokey goodness. Thanks for looking
 
A bit of sammie heaven there!!!! Lookin' great!! BTW...-9 here in SE MN. Might do soup instead
of smokin' this weekend!!
 
man that looks good. Any secrets to slicing a roast like that without freezing first? Or as long as you don’t cook too long no issue?
 
Awesome looking Jake! Might need some of those in my future. And by the looks of it... you have way too much color in your background pics, all white would be much better!

Thanks bud. 17 here this morning and we are under a winter storm warning. Possible to get a couple feet of snow over the next few days. Pretty unheard of around here

Thanks BB. Temp was 23 yesterday so I sat it outside to rapid cool then into the freezer for about an hour. Roast was still pretty soft when I sliced. Just put good pressure on it as I was slicing and didn't have a single issue

Lol thanks dave I was planning this for last week but my injection didn't get here in time. Keep an eye on the weather. News is saying biggest winter storm in decades. Freezing rain here now
