Looks great. I put a new pan under the last batch of ribs I did with salt and pepper only. Jared it up and fry eggs and hash brown patties in it. Very tasty.

Looks tasty to me. Was the fat fully rendered?
Not fully but soft enough that it tastes good ...and I only did them for approximately 4 hours...new method I used....super tender but not falling off the bone. I usually use the 321 method but sometimes that makes them too tender...for me anyways

Looks good, ya gonna share your method
I apply rub...no binder...let sit for about 45 minutes....inject with nix of rub and apple juice...smoke at 275 for 2 hrs. After first hour I spritz with mix of sprite and apple juice....remove after 2hrs and wrap with foil....inside foil I add butter, brown sugar and honey....back in smoker for 1 1/2 hours meat side down...remove after 1 1/2 hours....I mix some of the juices with BBQ sauce and paint it on with brush...back in smoker for about a half hour or so to set that BBQ sauce....pull off and let rest for 10 min before slicing...super tender but not falling apart like the 321 method...give it a try....you won't be disappointed and it's a lot quicker
