Smoked pork shanks - any suggestions?

After looking for some time I found a butcher that is getting me fresh pork shanks cut into "Pig Wings". I am thinking about smoking at around 225 degrees for about 5 hours but I am interested in any suggestions out there. Of course I will apply a rub and let them sit for about 24 hours beforehand but beyond that I am not sure.
 
Me either....but I am in to find out what the others have to say.....and to see the q-view! :biggrin:
 
NJ, morning.....  JP61 found my thread...   I have smoked them for beans.... not for pig wings though..  I should....   I think I would brine them with some brown sugar in the brine and then do the rub also...  I know bride brines all pork here before cooking and it is juicy...   Dave
