I have a couple pounds of wings to smoke tomorrow. In the pastI have done them by marinading in Franks, then smoking till about done then tossing on the gasser to crisp up. Works ok. BUT, I feel they could be better. Considering these options:
  1. Wet marinate in Jerk marinade
  2. Dry rub with jerk rub
  3. Dry rub with Meat Church Hot Honey
thoughts on dry rub vs wet marinade? Thanks, I will attempt to get full pictures this time...

I like dry myself . Just depends on what you're going for . Franks has some buffalo wing shaker seasonings that are good in my opinion .
This is a homemade Carolina Reaper / pineapple rub I made
from a hot sauce ferment .

Not smoked , but you mention the gas grill . I have a good start to finish
method for the Genesis if you're interested .
 
I usually just salt and pepper them, start them at 225 for 45-60 minutes then crank up to 350 until they get a crisp to them. When I take them off smoker I roll them in a hot sauce or sometimes just eat them plain.
 
I put them in a Ziploc with veggie oil and add the seasoning. I use buffalo wing seasoning from Owens bbq. Love it. Smoke on the kettle about 300 degrees

Take them out of the package. No rinse.
Trim with poultry shears
On a cookie sheet give then a sprinkling of Kosmos Dirty Bird. Both sides.
In the fridge until the smoker gets to temp
One hour @ 350 degrees turning once
No sauce
Marzetti Buttermilk Ranch for dipping.

And I will be having some tomorrow thank you.

This is how I do wings on the gas grill . More of a fried wing result .
I mix 2 TBLS baking powder with 2 TBLS flour . Season that as you like .
You can use Baking powder only at 1 to 2 tsp per pound of wings .
The baking powder changes the PH of the skin , and starts to break it down . Let them sit in the fridge after dusting .
Lightly dust the wings , then use a sheet pan lined with non stick foil and a small amount of Veg oil or cooking spray .
I heat the grill up with all burners , then adjust them down when I add the wings .
Then just flip them until you get the color you like and the doneness .
This is the first flip .

ill take my wings fried with lots of corn starch in the flour. crunch the wife can hear from the living room. lol

They have quite a few different flavors available and they're only $1.22/pack. A pack is enough for about 12-14 pieces. Place the seasoning in a zipper bag along with the wings, shake to coat then smoke...

Was just going to pick up some Frank's Buffalo wing sauce tomorrow, now I got to get some of those too.
