Peruvian smoked chicken is one of my all time favorites. Steve Raichlen's recipe is a great base which you can tweak. If you decide to make this, I highly recommend getting huacatay paste and aji amarillo which you can order from Amazon. I also add in the aji rico sauce to add a kick. The green sauce is a must to dip the chicken in which you can find also in the link.

Just put the chicken on. Hard to tell but i also rubbed the chicken with the marinade inside as well.

I do it on the spinner from time to time. We're fortunate to have a couple fairly decent "international" markets in the area and the aji amarillo and huacatay are easy to come by. I'm sure yours is gonna turn out right tasty!
 
Looks great. Those have always been flavors I love. I need to order some supplies!
 
Pulled after a few more hours and temp reaching 165. Letting it rest and will plate with some pics of the two different sauces I made

It looks great. I love the Peruvian marinade on chicken but it also works great on beef.

I use it on Tri-Tip quite often. Cubed and cooked on skewers.
