Smoked meatloaf with mashed taters and Brisket gravy

I made an old fashioned meatloaf today while working on the truck and mowing the yard. I started it in my favorite stick burner, the New Braunfels horizontal I restored a few years ago. Near the end of the cook I was elbow deep under the hood and neglected to feed the fire, so the temp dropped to the low 200's. Not wanting to use the chimney to start more briquettes, I fired up the pellet grill and transferred it there to finish..
I made some mashed potatoes and used the drippings I had reserved from my last Brisket cook to make an incredible gravy! It sure beats the heck out of the prepackaged stuff and added some beefy goodness to the taters and meatloaf!

Meatloaf is always good..and Looks like you do my gravy method when plating... drown it with the stuff! :)
 
I’d eat that at least 5 days a week! Nice looking meatloaf, better looking plate!

Thanks everyone. Ir was great in spite of my inattention to fire management while trying to do too many things at once. If you have never changed individual coil packs on an F250, there are cuss words you have not yet learned!:rolleyes: All but two went pretty smooth, and those were a bear!!! no offense bearcarver:D The intermittent miss is gone and the old gal is running great again, for having 370,000 miles that is!

I did up my 1st meatloaf yesterday. It turned out well but I did not get a smoke ring like yours.
 
Damn Radio, that looks fantastic. I bet that was so delicious. Even the mashed potatoes and gravy look incredibly inviting. Great job.

Wow! That's some colorful meatloaf there! I can almost taste that Smokey gravy from here!
