This is my first attempt at cooking a meatloaf in my Masterbuilt XL Propane smoker. It came out fantastic. I tried this same recipe in my MES40 & I didn't like it. I haven't cooked in my MES40 since I got the new smoker. I guess craigslist gets my old smoker. Bad part is that the MES40 is only a month or two old. But that's a different story.. lol

I used the recipe from yardbird in the post http://www.smokingmeatforums.com/t/115901/today-is-first-smoke-day. Thanks yardbird for this recipe. It is very tasty..

I cooked the meatloaf between 225 & 240. It was a windy day yesterday & the temp did fluctuate. I cooked it until the IT reached 180. My wife & I like our meat done more than most. We like for the hamburger meat to be firm. The higher temp didn't hurt the meatloaf one bit. The bark was excellent & the inside was nice & moist. It took about 5 hours total smoke time as this was a 3 lb meatloaf. I had smoke going the whole time. I used Oak Chunks for the smoke.

I smoked in this pan. I used my pocket knife to cut holes in the pan for the grease to drain from.
