Smoked mackerel

    Got about 6 kg of mackerel. The fish counter took care of the messy part (cleaning the fish).

    Dry brined it for about 8h. Then washed and dried under a fan.

    Smoked with apple for 4h.

    Finished late into the night. Will taste today.
