Smoked lamb ribs

Race or no race the ribs went on!

These were seasoned with sumac, rosemary, thyme, oregano and spog.

They went into the MES at 235 for about 3 hours until probe tender which happened to be around 190 IT. Used cherry/apple dust in the tube for smoke.

Sides were steamed asparagus with lots of garlic and straight up mashed potatoes.

The ribs were absolutely delicious.

That looks so delicious. On the farm we would butcher lamb and the ribs were always supper. So dang good. Nice work.

Those look way better than the plate ribs I got from Aldi. You really had to hunt to find any meat on them.

These actually came from Aldis I just had to pick thru all the different packages to find a good one.
 
I'll have to check Aldi's as well. I've seen lamb ribs on the forum a few times and have wanted to try them. Love seasonings you used.
 
It's packaged as a lamb breast plate or plate ribs or some such. What I got anyhow. It comes in two pieces. One is more or less a lamb brisket and the other piece has the ends of the ribs.

Went to Aldis today and they had plenty of ribs at $3.49/lb but these things were as flat as pancakes. Bummer as I was hoping to do these again soon because they were so good.

Musta been what I got. Came out tasty, but you had to hunt to find any meat.

I've done them twice. Once they came from Aldis...

The first ones came from a grocery store, Publix maybe, can't remember...

Seems the ones I got from the grocery store were better and meatier, but they were both very good and I would like to do them again...
