I do whole heads but cain't say that they're smoked really. I cut the core out then fill it with a seasoned Worcester/soy mixture then pack it full of butter and wrap in in foil. Then toss it on whatever heat source.
I was gonna say I had a buddy years ago that did them on a gas grill . Like said above he used a soup can to core them . Chopped that up and added cooked sausage or ground beef . Sauteed carrots , onions and celery . Stuffed that back in the head , wrapped in foil and cooked . Good stuff .
